Saved By The Crock Pot…Again!

Have you ever had one of those weeks where you’re just crazy busy, running everywhere and trying to keep all the balls in the air? Um…yes, I know…of course you have. Everybody has. I have had one of those weeks. It just seemed to be jam packed with things that ate away all my time and kept me running.

But even when life gets busy, my family still demands to eat. I know, right? So this week I’ve making good use of my crock pot. And have actually used it THREE times. We usually average two. I got a bonus meal in this week. Yay, me.

So, in the interest of sharing, and in the 100% likelihood that one of you is also having a crazy week, I thought I’d let you in on what my family has been eating all week.

The first thing I made this week was very strange (for me anyway) because it was breakfast. Yup, breakfast in the crock pot. I know lots of people have done this, but I’ve never even considered it. But I wanted to mix things up and the jalapeno sausage hash recipe caught my eye, so I figured why not. First, I have to say this one may have taken more prep then I usually like, but this may have only been because I had to whip out my food processor to shred some sweet potatoes and I’ll be honest, in the ten years I’ve owned it, I’ve never used any other attachments except for the regular blade. And even then, most of that food processing took place about ten years ago. Anyway, after I figured it out (with a little help from hubby) and sprayed some sweet potato pieces around the room at high velocity, it really wasn’t that bad in the prep department. Fair warning, I have a friend who insists everything cooked in a slow cooker comes out looking like dog food…this one really does. BUT it’s so good and when you wake up to the smell, it won’t even matter.

The other recipe I did was a first time one for me and it will absolutely get a repeat performance in this house because not only did both children tell me how much they loved it, but they both had seconds and one took left overs for lunch…TOTAL WIN! This one is an easy and super yummy beef stew. Trust me, you want to put this in your slow cooker rotation. And it makes the house smell delish! And last but not least, our Thursday night dinner was a special request from the kids…tacos. I realize this isn’t an earth shattering recipe, but this is what I do. I stick some ground beef in the crock pot, put about four tablespoons of Taco seasoning over it. About 1/2 cup of water and….that’s it. The kids love it in a wrap and we eat it as taco salad. Like I said, not earth shattering but a very easy crowd pleaser.
